Recipe: Gluten free and Vegan Pancakes
So you have food intolerances and are craving a treat? You haven’t had a good pancake in a really long time and you could totally be ready to suffer a little for that delicious brunch menu? Wait a second…. You can still have a really good pancake and respect your body and intolerances… here is one of my favorite pancake recipe, fully gluten free, vegan and "normal people" approved!!
You will need:
First, prepare your chia seed egg. Chia seeds are these little black seeds full of magnesium, high in omega 3 and promote a healthy digestion. A real little magic grain! For your pancakes put 2 spoons of chia seeds in some warm water (about 6 spoons of water), mix and let rest until the grains grow (just about 5 min).
In the meantime, mash up your bananas and mix the puree with your flours (about 200grs of flour). Then add some veggie milk of your choice. I love using the mix that you can find at COOP (Karma rice and almond milk) as the taste is delicious and there is no added sugar. Add milk until the mix is nice and soft (about 300ml). And now you can add up to that mixture your chia seed egg and stir the whole thing up.
Finally, I added some pure cacao nibs in the mixture, giving the pancakes a little extra bitter taste and a superfood benefit. Indeed, cacao nibs are full of iron, high in fiber andante-oxidant.
Just stir everything up and add up a secret ingredient so that the pancakes don’t stick…. A spoon of veggie oil. I know, it’s not all that healthy, but come on, it’s just a spoon to taste delicious and overall healthy pancakes.
You just need to cook them up and add your favorite toppings…
